The skin of the kiwi is full of great healthy stuff! Flavanoids, as in kiwi skin, have potential anticancer, antiinflammatory and antiallergenic properties. Therefore, your mother ate it correctly! LOL I also will eat the skin. Although fuzzy, it doesn't have a bad taste.

never had vegetable Jerky. Is it just dried veggies or is the some special way its made.

Dried kiwi. Just peel and slice some kiwi and run them through your dehydrater if you have one. Really intensifies the flavor and gives them a nice crispy crunch.
